Brunch Heaven Food Avocado Eggs and Smoked Salmon

This recipe is not only delicious but healthy. It comes from what I call “Brunch Heaven”. It contains protein and it’s rich in vitamin B12.

Ingredients

1 avocado

2 eggs

1 1/2 tbsp rice wine vinegar

1 tsp sesame oil

1/2 tsp honey

1 1/2 tbsp chopped dill

1/2 cucumber

50g (1 3/4 oz) smoked salmon

HOW TO PREPARE IT:
In oven: Cut the avocado/s in halves, remove the seed and a bit of the flesh to make a bigger hole for the egg to sit in. Put the halves in a dish, and crack an egg into each half. Now bake it for 15 to 18 minutes depending on your oven temperatures settings.
In the meantime you can do the following: mix together the rice wine vinegar, sesame oil, honey and 1 tbsp of the dill. Peel the cucumber then cut it into thin strips. Add to the dressing and mix well.
Put the baked avocado half on each plate  and sprinkle with the remaining dill. Season to your liking and serve with the cucumber salad.

You can serve the smoked salmon on the side or on top of each avocado half. Enjoy!

MY STARFRUIT JUICE RECIPE

INGREDIENTS:

  • 2 Starfruit cut into pieces
  • 1 lemon worth of lemon juice
  • 1 tbsp stevia
  • 1 scoop creatine monohydrate
  • 1 cup ice
  • 1 cup water

INSTRUCTIONS:

  1.   Add the starfruit, lemon juice, stevia, and creatine to the blender
  2.   Blend
  3.   Strain into a glass
  4.  Serve garnished with a lemon or starfruit star

SALMON TACOS WITH PAPRIKA

Cook this healthy Tacos for Dinner: Delicious, crunchy, wholesome, with a hint of spicy goodness.

A little bit of feta to top it off and we have ourselves a super easy, quick, and healthy meal with these healthy salmon tacos!


Ingredients

2 salmon fillets

1/4 tsp crushed garlic

1/4 tsp oregano

1/4 tsp paprika

1/8 tsp cayenne

1 tsp black pepper

1/8 tsp sea salt

4 corn tortillas

1 cup shredded red cabbage

1/4 cup corn, canned1 Tbsp cilantro – 

Instructions

Preheat oven to 425 degrees.

Mix the garlic, oregano, cayenne, paprika, pepper, and salt together.
Place the salmon filets on an oiled baking sheet.

Brush the seasoning mix over the filets and bake for about 30 minutes (or until fully cooked and flaky).

While the salmon is cooking, heat up the tortillas on a pan or in the microwave (to desired amount).

Add sliced salmon to each tortilla when ready.

Top each salmon placed in the tortilla with shredded red cabbage, corn, and cilantro.

SALMON RECIPE:

Clean Eating Baked Thai Salmon

 

Ingredients

 

6 x 6 oz sockeye salmon fillets, skin on or off
Pinch of salt
1/2 cup + 2 tbsp Thai sweet chili sauce, divided
2 – 3 tbsp green onions, chopped
Cooking spray (I use Misto)

Directions for salmon recipe

 

In a large baking dish, lay down salmon fillets in a row. Each fillet – sprinkle with a pinch of salt and top with 1 tbsp Thai sweet chili sauce. Brush or rub with your fingers to coat fish with sauce evenly on top, bottom and sides. Cover and let marinate in the fridge for at least 2 hours or overnight is the best (up to 24 hours).

 

Turn on oven’s broiler on High and position top oven rack 5″ – 6″ below the heat source. Line large baking sheet with unbleached parchment paper, spray with cooking spray and place salmon fillets skin side down (if any). Coat with remaining marinade from the dish (if any).

Broil for 8 minutes, rotating baking sheet once. Remove from the oven and brush top of each fillet with 2 tsp of Thai sweet chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized. Serve hot garnished with green onions, extra sauce (if desired) with brown rice or quinoa on a side.

DELICIOUS SALMON RECIPE

 

INGREDIENTS

1 tbsp. olive oil
2 lemons
4 5 oz. skinless salmon fillets
Kosher salt and pepper
1 lb. seedless cucumbers, sliced on a bias
3 oz. feta cheese
1/4 c. plain Greek yogurt
1/4 c. small mint leaves, roughly chopped

DIRECTIONS

Heat oil in a large skillet on medium. Halve 1 lemon and place halves, cut sides down, in the skillet.

Season salmon with ½ tsp each salt and pepper and cook until golden brown and opaque throughout, 3 to 6 minutes per side. Transfer salmon fillets to plates. Transfer lemon halves to a cutting board and cut each in half.

Meanwhile, in a large bowl, toss cucumbers with 1/4 tsp salt. Finely grate zest of remaining lemon into a food processor and squeeze in 3 Tbsp juice.

Add feta and yogurt and puree until smooth.
Toss with cucumbers to coat, then fold in mint and freshly cracked pepper. Serve with salmon and a charred lemon wedge for squeezing.
